RECIPE: Chicken Teriyaki Sushi

Preparation Time : 30 minutes

Cooking Time : 15 minutes

Yield : 2

Ingredients

1 chicken breast, sliced into strips

2 tbs. canola oil for cooking the chicken

1/4 cup soy sauce

1/4 cup honey

2 tbs. cornstarch

fresh minced ginger (about 1 tbs)

red pepper flakes for heat if desired

1 clove garlic minced

10 sheets of nori (seaweed) with seasoned with evenly spread cooked sushi rice

Directions:

1.  Heat up a skillet/fry pan on med. and then add in the oil.  Start sauté-ing the chicken strips until the outside is cooked.

2.  Mix the rest of the ingredients together in a small saucepan and bring to a boil.  Watch this though, the sugar in the honey can cause it to expand and thus splatter all over your stove quickly!

3. Pour 1/2 of the sauce over the chicken as it is cooking, let finish cooking, stirring and turning the chicken frequently until fully cooked.

4. Use the rest of the sauce for dipping.

5. Place the chicken in the centre of the prepared nori, and roll it up.
